Nestlé Professional Celebrates Sustainability at Toque d’Or® 2025 with Green Spatula Award

Nestlé Professional Toque d’Or® remains one of the UK’s most prestigious hospitality competitions, designed to inspire, educate, and celebrate outstanding food service college students across the UK. 

First launched in 1989, Nestlé Professional Toque d’Or® remains one of the UK’s most prestigious hospitality competitions, designed to inspire, educate, and celebrate outstanding food service college students across the UK. 

Building on the success of its debut at the Global Chefs Challenge Finals in Singapore, the Nestlé Professional Green Spatula award was also featured in 37th Toque d’Or® hospitality competition, hosted in the UK by Nestlé Professional.

This year, the Nestlé Professional Green Spatula award shone a spotlight on the next generation of foodservice leaders, honouring students who demonstrate exceptional commitment to sustainability. 

The Green Spatula Award highlights the industry’s dedication to embrace sustainable practices and drive meaningful change for a healthier planet, through responsible sourcing, waste reduction, and thoughtful culinary practices. It acknowledges those who are skilled in the kitchen and passionate about making a positive difference in the foodservice sector.

Thomas Brassington from Loughborough College has been crowned back-of-house (BOH) champion and Katie Blundell from Hugh Baird College has taken the front-of-house (FOH) title, after an action-packed Grand Finals Week.

Toque d'Or Competition UK 2025 Winners

 

The Nestlé Professional Green Spatula was awarded to:

  • Serin Hassan from Westminster Kingsway College was recognized as the back-of-house competitor who demonstrated how their skills, ingredient choices, and cooking methods support environmental sustainability.
  • Victoria Royer from Coleg Cambria stood out as the front-of-house participant who showed exceptional understanding of sustainability’s role within the hospitality industry.

Emmanuel Lorieux, Global Chef and Culinary Partnership Manager at Nestlé Professional, played a key role in shaping the award. "We believe the culinary world has a vital role to play in advancing sustainability, and we’re proud to offer a platform that highlights the innovative chefs leading the way."

Renowned for showcasing the finest emerging hospitality talent, the Toque d’Or competition now also serves as a platform for promoting sustainability within the industry. 

The 2025 Nestlé Professional Toque d’Or® Awards Ceremony was held on Friday, June 6 2025, in London and celebrated the achievements of the 12 finalists—six from Back of House and six from Front of House—all who competed in the Grand Finals from 11 to 15 May 2025.
